I recently received an awesome miniature bundt cake pan as a gift. Or, maybe it’s called a mini-fluted pan. Whatever it’s called, it makes these adorable little doughnut-esque cakes. For my first recipe I made these little lemon cakes. They turned out great and can be served individually, no knife required. I’m looking forward to making more of these little cakes with different recipes. Enjoy!
I feel like mash-up foods have been really popular lately (i.e. macaroni and cheeseburgers or how about grilled cheese hamburgers?) If you can’t choose between two things just smash them together and eat both. It’s a perfect solution for the indecisive.
In this case we’ve got a brownie covered with cheesecake. Who says you should have to choose between the two when you can have both? Enjoy!
This recipe is billed as a “cake,” but everyone who saw it referred to it as a “brownie.” I suppose we could go into a philosophical debate about the point in which a cake reaches a high enough density to be called a brownie, but it’s probably just easier to enjoy without thinking about it too much. If you insist on defining it maybe we could think of a new word (Cownie? Brake?) Basically, if you like chocolate I think you’ll like this. Enjoy!
To continue with the cherry theme I FINALLY made a cherry pie. Believe it or not, I’ve never actually made a pie (cherry or otherwise) so this was a somewhat new experience for me. I was a little nervous because people can be so picky about the crust and a lot of people just end up buying a frozen crust. With all respect to people who do use pre-made crusts, I didn’t feel like I could say that I really “made” a pie unless I made the crust myself. I’m sure different people have different crust preferences, but I thought it turned out alright. Hopefully I will make more pies in the future to get practice making it better and better.

Early summer means a lot of different things to different people. For children it means the end of the school year, for college students it means graduation, for just about everyone it means the return of the smell of sunscreen and outdoor barbecues. In California though early summer means the return of the short-lived cherry season. We take it for granted that we have fresh produce available all year round, but it always seems to me that cherries come and go within a few weeks and if you blink you might miss it.
Luckily, I didn’t miss it this year and have been enjoying cherries for the last couple of weeks. Although, even now, I’m seeing fewer of them in stores/markets. This recipe calls for maraschino cherries (which tend to carry a very polarized stigma among the people I’ve talked to) but obviously you should use fresh cherries if you have them available. A member of my church very generously donated a bunch of fresh picked pie cherries to me -which is what I used.
So bust out the lawn chairs, sunglasses, and lemonade and enjoy these tasty coconut cherry bars.
Hello again and Happy Memorial Day! It’s been a little while since my last post, but I can assure you I’ve still been baking. I just haven’t made any new recipes lately so I haven’t had anything to post. This was my first time making piña colada cupcakes though. I’ve made coconut cupcakes, pineapple muffins, and Hawaiian banana nut bread before so it makes sense that I should combine these things to make a baked version of the delicious piña colada.
And no, I’m not going to make a joke about “The Piña Colada Song.” It gets referenced to the extent that piña coladas have almost become a meme. Also, if you actually read the lyrics to the song you realize that the song is about two people mutually contemplating being unfaithful to one another which kind of takes the whimsy out of it. I’ll just say that I love piña coladas but would prefer not to get caught in the rain and that’s just fine. Well I guess I ended up referencing the song after all. It can’t be avoided.

It’s been a bit since my last post, but I’ve still been baking! This is the first cake I’ve ever made in a cast iron skillet pan so maybe it has some extra iron in it. It goes great with coffee, tea, or whatever your beverage of choice is. Or, just have it anytime. Enjoy!
