Eggnog Muffins and Eggnog Blondies

I’m continuing withe the eggnog holiday theme with not one, but TWO more eggnog based recipes.  I’m sure everyone will be sick of eggnog by December 26th (6 days from now, yipes!), but let us not dwell on the future, but relish the present.

Speaking of presents, I hope everyone has a fantastic Christmas.  And remember, Christmas is not just about presents, it’s also about delicious baked goods..and of course the birth of Jesus.  But I’m pretty sure Jesus would’ve liked baked goods, so maybe this year celebrate Christmas by utilizing your baking skills and make a birthday cake for Jesus.

Eggnog Cookies

While I’m on the topic of Christmas, I’m guessing that eggnog is about the most Christmassy food/drink you can get.  I have a feeling that eggnog distributors/manufacturers probably spend the whole year just waiting for December.  When December comes business goes into the black and then they spend the rest of the year living on the profits, making more eggs and….nogs…just biding their time until the next Holiday season.

Eggnog is not just limited to drinking.  It can also be used in baking, and I will share one of my recent eggnoggy creations with you now.  Here is the recipe!

Gingerbread Muffins

Counting down the days till Christmas!  I feel like gingerbread is one of those things you hear about in stories and traditions, but doesn’t actually get eaten a lot.  For example, at Christmastime you build gingerbread houses, but I don’t think they usually get eaten.  And of course there the old “run, run as fast as you can, you can’t catch me I’m the gingerbread man” thing.  I don’t think that gingerbread man ended up getting eaten…or maybe he did…I can’t really remember the story.  The point is that today’s recipe is not meant to be used for construction, nor need you worry about it running away from you.

I took my qualifying exam this week and made these muffins for my committee.  Am I saying that they contributed toward me passing?  No, but I don’t think they hurt either.

Reese’s Ultimate Brownies

I’m always on the lookout for new recipes and this is one I found on a little card posted next to the chocolate chips in the baking aisle at the Safeway.  It’s almost like they were trying to encourage me to buy chocolate chips by providing me with a recipe right there to use them in.

Intentional or not, I did give Hershey’s my business by buying some peanut butter chips. You can use either regular chocolate chips or peanut butter chips (like I did) for this recipe.
