Cherry Almond Shortbread Cookies

Those who know me, find out pretty quickly what my favorite color is.  In fact you could probably guess just by checking out my car.  Her name is Sparkles and her official color is called “techno pink.”  I was pretty pumped when I found out that the dealer had a pink car.  And when I go clothes shopping I tend to gravitate toward the pink stuff.  I just bought a duvet for my new comforter.  You can guess what color it is.

Anyway, if for no other reason I like these cookies because…they are kind of pink.  And all things pink must be good.  Except pink eye…I think that probably sucks.

Red Velvet Cupcakes

I was looking up the history of the red velvet cake and came across some kind of interesting stuff.  The cake seems to date back to the Great Depression and during World War II, bakers used boiled beet juices to enhance the color of the classic red velvet cake.  This particular recipe does not include beets, but maybe I’ll try a variation of the recipe sometime.

This was the first time I made red velvet cupcakes, and figured it would be fun to add little candy eyes to give them a little “personality.”  I just hope they don’t take on so much personality that people feel guilty about eating them….somehow I doubt that it will.

Spicy Pumpkin-Carrot Muffins

What do pumpkins and carrots have in common?  Well, they are both orange and they are both in this muffin recipe.  That means that eating one of these muffins counts for double vegetables.  I suppose we could add some actual oranges to the recipe to stick with the orange theme and get fruit in there, but I have to say that I don’t think oranges would add anything positive to this particular recipe.  We’ve also got cayenne pepper powder (also orange…ish) to add a little zing.

Spicy Pumpkin Carrot Muffins

I should note that I added the glaze.  It is made of 1/4 cup of butter, 2 tbsp milk, and powdered sugar (added powdered sugar until you have a desired consistency).
