This is a great coffee cake to have with your morning…coffee (or tea, hot chocolate, juice, morning whiskey…really anything). It’s packed with blueberries, which gives it a nice, summery feel. Where I live, it’s definitely starting to feel like summer. And, for those of you who aren’t quite feeling the summer vibes yet, hopefully fresh blueberries will get you in the spirit.
I’ve been on a streak with lemon-based recipes the last few weeks and I decided to continue it with these lemon bars. I threw in some coconut (mostly because I had some leftover coconut from last week’s recipe) just to make them my own. I hope that you enjoy them!
Here’s another variation on banana bread, and it’s an especially good one for those of you who may not be what you’d exactly call “early birds,” because it includes…COFFEE! Yep, you can now get a caffeine buzz and a sugar high all at once if you want. Your productivity knows no bounds. Plus, it’s got chocolate and I added in some pecans and coconut just to liven it up even more.

When I was young (and still today actually), whenever I went to a restaurant the first thing the waiter/ess would bring to the table would be water, often with a lemon hinged on the rim of the glass. If they didn’t bring the water with a lemon, I would (still do) ask specifically for water with lemon. Often, my family members would give me their lemons. I wouldn’t put the lemons into the water, but would eat them whole down to the rind. I loved the sour taste of lemons, which most people don’t seem to appreciate.
Well, for those of you who are not such hard core lemon-lovers, I’ve got these cupcakes for you. The sour, zesty lemon flavor is balanced out by sweetness. Also, I threw in some coconut (not listed in the original recipe) just to make it interesting.

Happy Easter everyone! I made these muffins today to bring to my church’s annual Easter brunch. The recipe is to make a loaf/cake, but I made them into muffins to make them easier to eat without utensils. I hope you enjoy and have a blessed Easter!

I made this a while ago, but I forgot to put it up. I have been busy and haven’t posted anything in a while, so I figured I better share before I forget. This cake turned out really nice. One thing to note about the recipe is that it is a vegan recipe, but I did not stick to the vegan code. So, if you want to follow the recipe that’s cool, but if not it will work just as well with non-vegan substitutions. Don’t worry though, vegan or not there is still plenty of gluten in either recipe.
