Here is yet another variation on banana bread. My first reaction to baking with carrots is that vegetables and dessert don’t usually mix. Then I remember, oh yeah, carrot cake. It’s delicious. Somebody somewhere decided that adding carrots to flour and sugar would be good, and…they were right. Carrot cake is delicious. And, what could be better than adding in bananas? The result is a very rich, moist bread (can also be made into muffins). I also added in some trail mix just to make it interesting.
