Sparkling Peppermint Cookies

Well, I’d say we’re pretty solidly in the Christmas season now.  That means it’s time to bust out the carols, Christmas trees, wreaths, mangers, ornaments, etc…In terms of baking it’s time to transition from pumpkin to things like eggnog, ginger, and…peppermint!

Ah yes, peppermint.  What would Christmas be without candy canes?  Well, it would still be Christmas; but, nonetheless, peppermint is a very Christmassy flavor.  However, I was always annoyed by candy canes because they are super difficult to unwrap and I could never seem to finish one.  I would suck on it to a certain point where the candy cane would always be too small to hold but too big to swallow.

So, if you want the flavor of a candy cane unfettered by the inherent difficulties of sucking on an actual candy cane (and you also like cookies) you should totally make these cookies.  They are easy and sure to be a hit!

Coconut Banana Bread

Hi all!

Sorry I haven’t posted much lately.  I’ve still been baking, but haven’t made a new recipe lately.  Also, I’ve been preoccupied with MY NEW PUPPY!  His name is Bernie Flanders and he is a cream colored long-haired dachshund.  He is the best dog ever and I love him so much.

Now that you have seen the cutest puppy ever, here are the latest coconut banana muffins I made.  I’ve made coconut things before and I’ve made banana things before, but i don’t think I’ve made exclusively coconut banana muffins before.  I’m sure Bernie Flanders would like them and I hope you do too!

Strawberry Oatmeal Cookies

Strawberries are some of my favorite fruit (yes I know that strawberries are not actual berries, but rather “aggregate accessory fruits”)-well they are my favorite along with bananas, cherries, raspberries, grapes, blackberries, peaches….I like fruit, okay?

These cookies are slightly modified from the recipe I am linking.  Namely, the recipe does not include oats.  The reason I included oats is because I am kind of impatient and lazy sometimes when I’m baking.

The recipe says to chop up the strawberries really small.  I figured I could save some time and effort by just putting the strawberries into my Ninja Chop.  Unfortunately, when I added the strawberry puree to the listed quantity of flour, sugar, etc what I ended up with was soupy sort of batter as opposed to a cookie dough.  I figured I could just make strawberry bread instead of cookies, but what I did instead was add about 2.5-3 cups of oats to the batter to make it stick together better.

And, lo and behold, the cookies actually turned out pretty good!  Sometimes impatience and laziness pays off!

Peach Cake

Well it’s definitely summer here with the temperatures hitting the triple digits most days.  A lot of people hate the extreme heat, but personally I’m willing to go through a couple months of heat in exchange for not having an extreme winter to deal with.

One thing I think everyone would agree is great about the summer though is peaches.  Peaches are in season here and of all of the simple, sweet pleasures in life peaches have got to be pretty high on the list.  You know what else is pretty high on the list?  Cake.  Therefore, eating peach cake has got to bring you pretty close to total enlightenment.  Try it for yourself.  Here is the recipe.  Enjoy!

Carrot Banana Bread

Here is yet another variation on banana bread.  My first reaction to baking with carrots is that vegetables and dessert don’t usually mix.  Then I remember, oh yeah, carrot cake.  It’s delicious.  Somebody somewhere decided that adding carrots to flour and sugar would be good, and…they were right.  Carrot cake is delicious.  And, what could be better than adding in bananas?  The result is a very rich, moist bread (can also be made into muffins).  I also added in some trail mix just to make it interesting.

Hershey’s Chocolate Cake

Hey all,

A few weeks back I was give a pack of five small 6-inch circular cake pans* to make a layer cake.  Last weekend I got around to making one.  I have to say that whenever I make cakes I am always disappointed with my inability to make them look as beautiful as all of the pictures you see on other baking blogs and in recipe books.  I can never do the frosting quite right and instead of having a smooth cylindrical cake I always end up with something that looks like a frosted slinky.

But, I don’t think the beauty affects the taste, and it’s really just an excuse to keep baking and trying to get better each time I do it!  Here is the chocolate cake (and recipe) I made.  I hope you enjoy!

*Side Note: I think that Wilton has like a monopoly on all baking pans/utensils because all of the good stuff comes from them.
